The procedure we follow
Selection & harvest
It starts on 20 September and it is done exclusively by hand. We check one by one the olive fruits and we transfer them immediately in order to maintain their aromas and freshness!
Extraction & standardization
The olive oil extraction is performed under the most stringent procedures at temperatures that permit the maximum preservation of beneficial ingredients. Our certified with EL 40347 bottling facility is located in a short distance from our olive groves, which we consider to be essential for the maintenance of the freshness of our Early Harvest olive oil and extra virgin olive oil.
